A tasty, tangy, healthy meal that’s quick and easy to make. You have endless variations to choose veggies and fruit you enjoy! Serves 4
Ingredients:
Skewered Veggie Kabobs
1 Box Baby Portobello Mushrooms
1 Box Cherry Tomatoes Or 2 Medium Tomatoes Quartered
2 Zucchinis Quartered
2 Yellow Squash
1 Large Onion Quartered
1 Red Pepper (Quartered) Or 6 Tri Colored Mini Peppers (Whole)
1 Brick Super Firm Organic Tofu (Whole Foods Brand Is Great)
8 Large Skewers
Marinade:
½ Cup Olive Oil
½ Cup Balsamic Vinegar
2 Cloves Garlic Minced Fine or 1 tsp. Garlic Powder
1 tsp. Salt and Pepper
¼ cup fresh Cilantro
or
1/2 Cup Paul Newman’s Organic Tuscan Italian Dressing
Directions:
Cut up veggies and place in large bowl, add marinade mixture and mix into veggies set in fridge to marinade for at least a half hour, longer the better
Take out veggies and skewer
Grill or Bake at 350 until veggies are tender but al dente.
Serve with Brown Rice or Quinoa
